Rhubarb Spritz

Makes 1 drink

Ingredients

4-5 stalks of Rhubarb

1/2 cup Jaggery

A squeeze of lime or lemon

Sparkling or Tonic Water [We recommend using Brooklyn Tonic Water]

1 oz of Gin (optional)

1 Orange Wheel

Method

1. Cut up rhubarb into cubes and put them in a pan.

2. Add jaggery and a squeeze of lime.

3. Let it cook down to a pulpy consistency.

4. Strain the pulp to separate the fibers out.

5. Add 2 tbsps of rhubarb jam to a glass.

6. If using gin, add gin to the glass.

7. Fill the glass up with ice.

8. Add sparkling or tonic water, mix it up with a spoon and finish with an orange wheel. Cheers!
